Ingredients
  

  • 2 tablespoons of olive oil
  • 1 onion diced
  • 1 green pepper diced
  • 2 cloves garlic minced
  • 2 teaspoons garam masala
  • 1 teaspoon ground ginger
  • 2 teaspoons of chili powder
  • 1 teaspoon of paprika
  • 1 can 14.5 ounces of tomato sauce
  • 1/2 cup of heavy cream
  • 1/4 cup of butter
  • 2 pounds chicken thighs cut into bite-size pieces
  • 1/2 cup of fresh cilantro chopped
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of black pepper

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion and green pepper and cook until softened, about 5 minutes.
  • Add the garlic, garam masala, ginger, chili powder, and paprika, and cook for 1 minute.
  • Add the tomato sauce and heavy cream and stir to combine.
  • Add the butter and stir until melted.
  • Add the chicken and cook for 10-12 minutes, until the chicken is cooked through.
  • Stir in the cilantro, salt, and pepper.
  • Serve the keto butter chicken over cauliflower rice or with vegetables. Enjoy!
