Ingredients
  

  • 4 tbsp erythritol
  • 10 oz 300ml heavy cream
  • 3 eggs
  • 1 tsp vanilla extract

Instructions
 

  • Heat the erythritol in a frying pan until liquified
  • Pour the melted erythritol into the room temperature heavy cream
  • In a separate bowl, add the eggs and whisk until mixed
  • Pour the heavy cream mixture into the eggs while whisking
  • Pour the mixture through a strainer to remove any large chunks
  • Add the vanilla extract, mix, then strain again
  • Pour the mixture into cups
  • Chill until ready to serve.
  • Top with low carb fruit such as berries prior to serving.
