Ingredients
  

  • 3 large eggs
  • 3 tbsp melted butter
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 tbsp sweetener monk fruit or erythritol
  • 1/4 tsp vanilla extract

Instructions
 

  • Preheat your waffle iron.
  • In a large bowl, whisk together the eggs and melted butter.
  • Add the almond flour, coconut flour, baking powder, cinnamon, sweetener, vanilla extract and salt. Mix well.
  • Pour in the heavy cream and stir until a smooth, lump-free batter forms.
  • Scoop the batter onto the preheated waffle iron in rounds to fill each waffle section.
  • Cook according to your waffle maker instructions, about 2-4 minutes, until the waffles are lightly browned and crispy.
  • Serve warm with your choice of keto-friendly toppings like butter, sugar-free syrup, berries, etc.
