- 3 large eggs
- 3 tbsp melted butter
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1 tbsp sweetener monk fruit or erythritol
- 1/4 tsp vanilla extract
Preheat your waffle iron.
In a large bowl, whisk together the eggs and melted butter.
Add the almond flour, coconut flour, baking powder, cinnamon, sweetener, vanilla extract and salt. Mix well.
Pour in the heavy cream and stir until a smooth, lump-free batter forms.
Scoop the batter onto the preheated waffle iron in rounds to fill each waffle section.
Cook according to your waffle maker instructions, about 2-4 minutes, until the waffles are lightly browned and crispy.
